Billie embodies the spirit of the Parisian bistro reinterpreted in its

own chic and cool way. Breaking away from codes and conventions, it

offers a sincere, skillful cuisine meant to be shared, best enjoyed as night

falls, surrounded by an intimate atmosphere and a curated musical selection

of vinyls spun by the house DJ, DJ Reason (from NYC), through a one-of-

a-kind sound system. As evening turns to night, dim lights and candlelit

tables set the stage for a comforting and captivating interlude a moment

suspended in warmth and rhythm.

the plate, born from the creative alchemy of an exceptional duo: Michelin-

starred chef Thomas Danigo, who has crafted a warm and sunlit menu, and

culinary art director Cynthia Frebour.

Behind the stoves, a duo unafraid to dream big: Cynthia Frebour,

a visionary culinary art director riding a creative wave, and

Thomas Danigo, a Michelin-starred chef who once helmed the

kitchens of the iconic Galanga.What unites them? A shared

passion for flavor and a deep respect for exceptional ingredients.

What lingers? A sense of conviviality and the pure joy of sharing

right down to the very last bite. At Billie, everyone finds happiness

in a menu that sings with Mediterranean accents: meat or fish,

pasta fresca or vegetarian plates, light bites or hearty dishes a

selection designed to satisfy every craving. At the table, certain

recipes have already become house favorites: a robust beef flank

steak (with Billie’s secret sauce); a crispy quinoa salad with kale,

avocado, almonds, and parmesan; and irresistibly creamy limone e

pepe linguine, fresh and perfectly al dente.

topped with mascarpone and basil. At lunchtime, in this vibrant

A unique acoustic and sound experience

The Billie experience is also about sound a unique system

designed with the precision of a recording studio. Developed by

Palladium Audio and craftsman William Ménard, this custom-

made setup took four months to complete and was designed by

César Gourdou. The result is a rare aesthetic, imagined to deliver

an exceptional, immersive sound quality.

Because at Billie, music isn’t just background noise it’s a

signature. Funk, soul, jazz, old-school hip-hop… a finely tuned

mix curated by the resident DJ and his collection of vinyl records.

And sometimes, there are surprises too special guests and artists

drop by to enrich the lineup and make the place vibrate with

their own unique flair.

Just like its cuisine, Billie’s musical programming celebrates

a taste for beautiful things.

On the turntables, handpicked gems spin in soulful

harmony: Soul Makossa by Manu Dibango, Off the Wall by Michael

Jackson, Give It to Me Baby by Rick James, or Fire by Ohio Players a

collection of rare treasures that give Billie its soul.

It all began with a meeting

Behind Billie stands César Gourdou. Discreet yet visionary, he

has already made his mark on the Parisian scene with Colonia,

a singular and irreverent cocktail bar that quickly became a

reference and an it-place in the city’s nightlife. With Billie, he

continues his pursuit: to imagine places that feel like home, where

elegance and conviviality are mastered with effortless grace.

Billie is the story of a meeting. Nicolas Saltiel, founder of

the hotel group Chapitre Six (Monsieur George, La Ponche, Le Bus

Palladium), and César Gourdou joined forces four years ago on a

first project.

From that collaboration grew a strong friendship and the

desire to go even further together.

With Billie, they have created a place in their image:
